To create the floating beer shots, I managed to convince the production company to build a custom camera rig which held the glass and camera together. Starting off at a 45 degree angle, as the beer was poured, the glass returned to an upright position and the camera went with it.
The resulting footage had a stationary container in the centre of frame which could be easily roto-ed off. I tracked it to follow the motion of the empty hand and added bouncy, fluid animation in Softimage.
